For just four days, Hilton Tokyo’s signature restaurant Metropolitan Grill will be hosting a pop-up by acclaimed chef and leading restaurateur Luke Mangan. 

Hailing from Australia, the world-renowned culinary talent has a remarkable career under his belt as he continues to operate a diverse range of restaurants that go beyond the traditional setting. He curated the dining experience on the Eastern & Oriental Express trains, consulted for Virgin Atlantic's in-flight dining, and launched a grill restaurant on P&O cruise ships. Additionally, Mangan has also catered celebrity weddings and designed unique menus for several bistros. More impressively, Mangan established Salt, his first restaurant in Sydney, back in 1999, which he then expanded globally with outposts in countries including Japan and Singapore.

For his pop-up at Hilton Tokyo, Mangan will showcase some of his signature dishes across lunch and dinner, which range from four to six courses. Additionally, there’s also a special six-course vegetarian menu. 

Highlights include Mangan's Sydney Fraser Isle crab omelette that’s famous at Glass Brasserie at Hilton Sydney, wood-roasted prawn curry butter with pineapple and finger lime, Australian lamb rack with romesco and vanilla fig, and the crowd-pleasing ​​Luke's Signature Liquorice and Lime parfait.

Dishes in the vegetarian course include a spiced pumpkin tortellini with coconut broth, kaffir, lime and Sydney spice, as well as wood-roasted celeriac with porcini and braised onions.
